SMITH, EARL LEON, SR.
Earl Leon Smith Sr., 79, of Ponchatoula, died Monday, December 25, 2006 at
his residence. He was born April 3, 1927 in Tylertown, Mississippi, son of
the late Mitchell Smith and the late Nola Tuttle Alford and step-son of the
late Lemon Alford. Earl started his career at the Standard Oil Company in
Tylertown, Mississippi. He moved to Ponchatoula in 1952, and with only a
third grade education, he decided to open a sausage business. The first one
was "Smith Old Hickory" and eventually he opened a second, "Old Time
Sausage" which was three miles east of Ponchatoula. This is also where he
built his home. After a successful run, Earl decided to retire his sausage
business and open a lounge named "Country Palace". Earl retired from this
business and decided to move down the river where he built and lived at the
Watergate Restaurant and Bar. After several years, he decided to come back
up the river. Never stopping with the meat business, he started a Bar-B-Que
business. He opened it in the same location as the Country Palace, it
became A-1 Salvage, a place where he could still smoke meat. He opened a
second location in Mississippi, but eventually sold out. Then he built his
third home next to the A-1in Ponchatoula. Trying to slow down, he sold A-1
and with the land he bought around him, he put in a trailer park and stone
yard, Fast Track Stone Yard. He built his fourth home behind the stone
yard. He loved the outdoors, and in the winter he kept a fire going, where
he spent many hours in front of with family and friends until the day he
died, December 25, 2006 Surviving are his wife, Joyce McNabb Smith; four
daughters, Patty Joiner of Quitman, Tx., Shirley Lee of Independence,
Tracie Kelsey of Cullman, Ala. and Terry Smith of Hammond; three sons, Eddy
Smith of Ponchatoula, Earl Smith, Jr. of Ponchatoula, Dale Smith of
Ponchatoula; 12 grandchildren, and 10 great-grandchildren. He was preceded

Smith. Friends will be received Thursday, December 28, 2006 at Harry
McKneely & Son in Ponchatoula from 1 pm until 2 pm. Religious service at
Sand Hill Cemetery following visitation., Thursday, December 28, 2006 at
